Garlic Herb Chicken with Casa de Fuego Finishing Salt

Ingredients
Serves 4
- 4 boneless, skinless chicken breasts
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons unsalted butter
- 4 garlic cloves, lightly crushed
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Freshly ground black pepper
- Kosher or sea salt, for initial seasoning
- Casa de Fuego finishing salt, to finish
Step 1: Prepare the Chicken
Remove the chicken from the refrigerator and pat it thoroughly dry with paper towels.
If the breasts are particularly thick, gently pound the thickest portion until the pieces are relatively even. This helps the chicken cook consistently.
Season lightly with salt and freshly ground black pepper.
Remember: we're adding finishing salt later, so don't aggressively salt the chicken at this stage.
Step 2: Get the Pan Hot
Place a heavy skillet over medium-high heat.
Add the olive oil.
Once the oil is hot and shimmering, carefully place the chicken into the pan.
Don't continually move it.
Allow the first side to develop a deep golden crust before turning.
Depending on thickness, this should take approximately 4–6 minutes.
Step 3: Add the Garlic and Herbs
Turn the chicken.
Reduce the heat slightly and add the butter, crushed garlic, thyme and rosemary.
As the butter melts and begins to foam, tilt the pan slightly and spoon the aromatic butter repeatedly over the chicken.
This classic technique helps build flavor while gently finishing the cooking process.
Continue cooking until the thickest part of the chicken reaches 165°F (74°C).
Step 4: Let the Chicken Rest
Transfer the chicken to a warm plate or cutting board.
Rest for approximately 5 minutes before slicing.
Don't skip this step.
Resting allows the juices to redistribute through the meat rather than running onto the cutting board.
Step 5: The Final Touch
Slice the chicken and arrange it on a serving plate.
Spoon a little of the garlic-herb pan butter over the top.
Then finish with a light pinch of Casa de Fuego immediately before serving.
