Crispy Skillet Chicken with Garlic, Herbs & Finishing Salt

Method

1. Prepare the Chicken

Pat the chicken breasts completely dry with paper towels.

If the breasts are particularly thick, gently pound the thicker end until they are relatively even. This allows the chicken to cook more consistently without drying out the thinner sections.

Season lightly with kosher salt and freshly ground black pepper.

2. Heat the Pan

Place a heavy skillet over medium-high heat and add the olive oil.

Allow the pan to become properly hot before adding the chicken. You should hear an immediate sizzle when the meat touches the pan.

3. Build the Crust

Place the chicken into the skillet and leave it undisturbed.

Cook for approximately 4–5 minutes on the first side, depending on thickness, until deeply golden.

Flip the chicken and reduce the heat slightly.

4. Add the Garlic, Butter and Herbs

Add the butter, crushed garlic, and fresh herbs.

As the butter begins to foam, tilt the skillet slightly and repeatedly spoon the aromatic butter over the chicken.

Continue cooking until the thickest part of the chicken reaches 165°F.

5. Rest

Transfer the chicken to a board or warm plate and allow it to rest for approximately 5 minutes.

Resting allows the juices to redistribute through the meat before slicing.

6. Finish with Casa de Fuego

Slice the chicken and spoon over a little of the garlic-herb butter remaining in the skillet.

Finish with a light pinch of Casa de Fuego immediately before serving.
